15° at one end, 20° at the other. Turn the block round — there is nothing to adjust.

400 grit diamond on one end of the roller, 3000 grit ceramic on the other. Turn it over — nothing to swap, no tools.
Time
The first sharpen takes longest, because it resets the edge to 15° or 20°. After that, a touch-up takes a few minutes.

Use it on
Full-size kitchen knives with a smooth edge — chef's, santoku, utility, carving. Full-bolster knives fit; the last bit of edge by the heel is hard to reach, as it is on a whetstone.

Quick: a sharp edge in a few minutes

Stand the knife on the magnet and it sits at exactly 15° or 20°, so every pass lands on the same edge. Roll along it on the 400 grit to sharpen, then on the 3000 grit to polish. Sharpen a knife you use every day about once every two weeks and each sharpen takes a few minutes.

The discs

400 grit + 3000 grit, one on each end

Both discs come with it, one on each end of the roller. The 400 grit diamond end does the sharpening: it takes off enough steel to reset a dull edge. The 3000 grit ceramic end then polishes that edge smooth, so it slices instead of tearing. Turn the roller around to switch. When the knife glides through a tomato skin, you're done.

Setup

Easy: no water, no oil, no soaking

A whetstone needs soaking, a flat surface and a rinse afterwards. This runs dry. Set the block on the counter, stand the knife on its magnet and roll. Only the edge touches the disc, and the blade rests on rubber, so it is never dragged through a slot the way a pull-through does it. When you're done, wipe the roller and put it away in a drawer.

Long lasting, and replaced if it wears out

The discs wear slowly. Every abrasive wears a little each time it's used, but a knife that's sharpened regularly only needs a few light passes, so the discs last a long time. Grinding a new edge on a very blunt knife wears the 400 grit faster.

Will it work on my knives?

Chef's, santoku, utility and carving knives with a smooth edge: yes. Serrated, ceramic, and short knives — paring, steak, pocket — no. The blade has to be magnetic: touch a fridge magnet to it, and if it sticks, the block will hold it. The block's magnet is strong: keep it away from bank cards, phones and anyone with a pacemaker, and keep it and sharp knives away from children.

Which angle should I use: 15° or 20°? Is it safe for a good knife?

20° for German and most Western knives, 15° for Japanese and other thin blades. If your knife is somewhere in between, use the nearest side; the first sharpen resets it. The block holds that angle on every pass, which is what keeps a good knife safe: only the edge touches the disc. If the knife is only a little dull, start on the 3000 grit side.

Does it get as sharp as a whetstone?

In skilled hands, a whetstone with very fine grits can go further. What most people actually get from a stone is an uneven edge, because the angle drifts. Rollkeen holds the angle on every pass, and that's most of what makes an edge sharp. For everyday cooking, the tomato test is the one that counts.

How long does it take?

Sharpen a knife you use every day about once every two weeks and it takes a few minutes: a few passes on the 400 grit, then the 3000 grit to polish. Bringing back a completely blunt knife, with no edge left, or a chipped one takes longer the first time, because the roller has to grind a new edge at 15° or 20° before it can polish it.
